Ships not in use will be in your Ships hanger. (in each station) The only limit on the number of ships you can have at any time is dependant on how many you can buy/build/find/steal. For mining, use the ship best suited for mining. When it's time for a mission, switch to the ship best suited for fighting.
For a mining frigate, Gallente pilots should get the Navitas. Each race has a frigate that has a mining yield/cargo hold bonus combo. Luckily, these frigs are also the cheapest and easiest to fly.
For the dedicated miner, Mining Barges & Exhumers are the way to go. If you're flying Gallente, stick with your mining frigate until you're able to fly a Retriever. All other races have a tier 1 cruiser that gets a bonus to mining yield. (Gallente just get an expanding cargo hold) For the health of your wallet and your sanity, do NOT get a Procurer. A Procurer is paper-thin and can be outmined by some of the frigates.
The Retriever is still pretty thin skinned, but can field a full set of 5 light drones (make those combat drones so you can defend yourself).
The Covetor is a little more sturdy than the Retriever and can field 5 medium drones, or 2 waves of 5 light drones. (Again, make sure you've got combat drones.)
After the Retriever and Covetor, are the lovely Exhumers.... very specialized versions of the Mining Barges that also have a bit stronger defences, but also cost quite a bit. (AND WORTH EVERY PENNY)
For general mining, the Hulk is best. (nothing out-mines a properly fitted Hulk) For Ice Mining, get a Mackinaw. (double yield, but takes 25% longer per cycle) The Skiff is specialized for a very small niche - Mercoxite, a deep 0.0 space ore that's a little hazardous to mine. (and when mining Mercoxite, the skiff will actually outmine a Hulk trying for Mercoxite)
